Echinacea and Melon Salad

Cantaloupe melon is very rich source of vitamin A, potassium, and folate. The berries are rich in vitamin C and antioxidants. Echinacea root is a premium immune-supportive herb and an important pollinator plant; the flower petals are edible too.

Recipe: Cantaloupe, Blackberries, Blueberries, Grapes, Echinacea Flower heads.

How to make:

Wash all the fruit first.

Prepare your melon and chop into bite size pieces before placing in a bowl.

Add the rest of the fruit and then scatter the flower heads on the top.

You can serve this with Yoghurt, icecream, cream, fromage Frais or any plant based alternatives for a lovely light summer dessert or breakfast. Add nuts and seeds for a bit of crunch.

Don’t forget that as you prepare and add each part of the salad, that you should be in your magical mindset, think about the goodness your dish will create and anything else that resonates magically for you with this dish.
